Creating an authentic Georgian experience in Shenzhen

I believe what sets my restaurants apart in Shenzhen’s diverse food scene is the dedication to genuine Georgian taste and atmosphere.

To maintain authenticity, I import key ingredients — spices, wine, and seasonings — straight from Georgia. When I run out, I simply fly home, stock up, and return. That’s essential because Georgian cuisine wouldn’t taste right without these specific seasonings.

Our decor also reflects Georgia’s rich heritage. For example, the restaurant’s arch is designed in traditional Georgian style, and the tablecloths are authentic Georgian fabric. We strive to recreate the atmosphere of a Georgian home — warm, lively, and welcoming.

In Georgia, we love to eat, dance, sing, and toast together. At MADLOBA, if someone doesn’t know how to say a traditional toast, I’m always ready to help.

Adapting the menu to suit local Chinese tastes was challenging. Georgian food is traditionally quite salty, so I reduced the salt levels significantly and even had to make unsalted cheese — a process that took patience and experimentation.

Finding staff familiar with Georgian dishes was difficult, especially with pronunciation. I personally trained my team to ensure they could offer a true Georgian hospitality experience.

After 17 years in China, I sometimes needed to reconnect with the original tastes of Georgian food. To do that, I frequently return home, taste the dishes repeatedly, and refresh my memory. For me, preserving authentic flavors is crucial.
