People in Shenzhen used to say that, for the best food, you had to go north to Guangzhou or south to Hong Kong. Though the city once lacked the long-held cooking pedigrees of its Cantonese neighbors, Shenzhen has started carving a niche as an experimental culinary melting pot, unconstrained by stiff traditions and unafraid to mix up regional styles and throw new ideas and ingredients into the pot.
