Italian chef presents new menu

Grand Hyatt Shenzhen has welcomed chef de cuisine Marco Pistillo to the hotel, where he will helm the kitchen at La Terrazza, the hotel’s trattoria-style Italian restaurant. Discover Pistillo’s enthusiasm and culinary expertise as he proudly takes guests on a culinary journey to Italy.

Pistillo’s homage to his native Italian family gatherings is evident in the new menu. His signature dishes feature the freshest ingredients carefully prepared with traditional time-tested techniques and a generous serving of care.

One such signature dish that embodies this principle is the chitarre amatriciana, homemade fresh pasta tossed in a spicy tomato sauce with onions and bacon. This is also the most frequently requested dish when he spends time with his family.

Guests, who want to venture beyond the pizza and pasta fare that Italian cuisine is usually associated with, may choose from a wide selection of other dishes.

Enticing appetizers include astice e burrata, a salad of Boston lobster with creamy burrata and freshly made pesto, as well as zuppetta di vongole e fregola, a warm starter of sautéed clams in white wine sauce with fregola pasta.

Pistillo’s signature main dishes comprise scaloppina di cervo, grilled venison rump accompanied by wild mushrooms and fried pastry cream; and tonna alla griglia, pan-fried Pacific tuna steak with fresh arugula and cherry tomatoes, drizzled with a balsamic dressing.

The dessert selection includes favorites such as classic tiramisu and yogurt panna cotta. However, Pistillo highly recommends the zuccotto, a light ricotta cake speckled with candied lemon, layered with chocolate cream, and served with chocolate ice cream.

With his charming Italian hospitality combined with the pride he takes in his profession, Pistillo has already created a strong camaraderie with the restaurant’s patrons. “I am excited about meeting guests and trying to make their dining experiences truly memorable,” said Pistillo.

In addition to the newly launched a la carte menu, selected new dishes are also featured on the Lunch Prix Fixe menu. This three-course semi-buffet lunch offer is available on weekdays between 11 a.m. and 2:30 p.m. The Lunch Prix Fixe menu offers unlimited servings of salami, cheese selections, Italian salads and appetizers from the antipasto bar, choice of a main course and a dessert.
